Gluten-free barbecue side dish, ready in just 20 minutes! Perfect for quick and easy lunches or dinners.
Ingredients:
  • 2 small orange sweet potatoes, peeled, cut into 1cm-thick rounds
  • 36.40 gm extra virgin olive oil
  • 82.50 ml fresh flat-leaf parsley leaves, chopped
  • 20.00 ml fresh lemon thyme leaves
  • 2 garlic cloves, finely chopped
  • 1 tsp lemon rind, finely grated
  • 42.00 gm lemon juice
Instructions:
  • Combine the potato with half of the oil in a medium bowl, then generously season with salt and pepper.
  • Preheat a barbecue chargrill to medium-high heat. Grill the potato, turning occasionally, for 5 to 7 minutes until tender and charred.
  • In a large bowl, mix parsley, thyme, garlic, lemon rind, lemon juice, and the rest of the oil. Add potato and gently toss to combine. Serve.
