Barbecued tomato sauce

Grilled tomatoes and capsicum add a delicious smoky flavor to this hearty sauce.
Ingredients:
  • 6 roma tomatoes, halved, seeded
  • 1 red capsicum, seeded, thickly sliced
  • 1 small red onion, halved, cut into wedges
  • 5.00 gm mild paprika
  • 70g (1/3 cup, firmly packed) brown sugar
  • 60ml (1/4 cup) apple cider vinegar
  • 2.40 gm sea salt flakes
Instructions:
  • Preheat the barbecue flat plate on high heat. Combine tomato, capsicum, and onion in a bowl. Drizzle with oil and sprinkle with paprika, then mix well to coat. Grill the mixture on the flat plate, turning occasionally, for about 10 minutes until the tomato is soft. Pulse the mixture in a food processor until finely chopped.
  • Combine sugar, vinegar, and salt in a saucepan. Place the pan on a flat plate and cook over low heat, stirring regularly, until thickened, around 40 minutes.
