BBQ potato salad with eggs, BBQ sauce, mayo, red onion, and garlic powder - a tasty twist on a classic American dish!
Ingredients:
  • 5 pounds unpeeled potatoes, cubed
  • 6 large hard-cooked eggs, peeled and finely diced
  • 1.5 cups mayonnaise
  • 0.5 cup barbeque sauce
  • 1 small red onion, diced
  • 0.5 teaspoon garlic powder
  • salt and ground black pepper to taste
  • 0.5 teaspoon ground paprika, or to taste
Instructions:
  • In a large pot, submerge the potatoes in water and bring to a lively boil over medium-high heat. Reduce the heat, cover, and gently simmer until the potatoes are tender, which should take about 15 to 20 minutes.
  • After draining the potatoes, arrange them in a single layer on baking sheets and chill in the refrigerator until cold, for about 2 hours.
  • Combine cooled potatoes with eggs, mayonnaise, barbeque sauce, onion, garlic powder, salt, and pepper in a large bowl; mix thoroughly. Garnish with paprika.
