Impress your guests with a delightful salmon and potato salad, ideal for any occasion. Great as a starter or a side dish.
Ingredients:
  • 3 (about 500g) skinless salmon fillets
  • 9.20 gm olive oil
  • 10.00 gm bush spices with mountain pepper
  • 360g pkt fresh baby potatoes with butter & parsley
  • 2 x 100g pkts watercress salad
  • 250g pkt qukes (baby cucumbers), chopped
  • 60ml lime
Instructions:
  • Preheat the barbeque plate over medium heat and the barbeque grill over medium-high heat. Coat the salmon with oil and season with spices. Slice the potatoes.
  • Begin by melting butter on the barbeque plate. Cook potato slices, turning once, for 7-8 minutes until golden. Then, grill salmon for 3-4 minutes on each side. Transfer the cooked salmon to a plate and the potato slices to a bowl.
  • Combine watercress, cucumber, large salmon chunks, and potato slices in a bowl, then gently toss everything together.
  • Mix the mayonnaise with 1-2 tablespoons of hot water until it reaches a pourable consistency. Drizzle the mixture over the salad and enjoy.
