Tender beef short ribs cooked in a rich sauce, served with carrots and mashed potatoes. No knife needed for this flavorful dish.
Ingredients:
  • 2 tablespoons vegetable oil
  • 5 pounds lean beef short ribs, cut into 3-inch pieces
  • 0.5 teaspoon fresh ground black pepper
  • 1 large onion, cut into thick slices and separated into rings
  • 5 carrots, peeled and cut into chunks
  • 4 cloves garlic, coarsely chopped
  • 1 (16 ounce) can tomato sauce
  • 1 cup barbeque sauce
  • 1 cup beef broth
Instructions:
  • Preheat your oven to 325°F (165°C).
  • In a heavy, oven-safe pot or Dutch oven, heat oil over medium heat. Brown the ribs on all sides for about 5 minutes, working in batches if needed. Season ribs with salt and black pepper as they brown. Transfer ribs to paper towels to absorb excess oil.
  • Combine onion rings and carrots in the pot. Sauté until onions are translucent and start to brown, around 8 minutes. Add garlic and cook until fragrant, about 1 minute. Mix in tomato sauce, barbeque sauce, and beef broth. Bring to a boil, then simmer for 1 minute to meld flavors. Finally, add the browned ribs into the sauce.
  • Seal the pot tightly and bake in the preheated oven until the rib meat is fork-tender, approximately 2 1/2 hours. Remember to rotate the ribs occasionally during the cooking process. Season with salt and black pepper to taste and serve piping hot.
