Barley and Pine Nut Casserole

Savory barley casserole bursting with veggies and pine nuts - a veggie lover's delight!
Ingredients:
  • 1 cup uncooked hulled or pearl barley
  • 1 1/2 cups vegetable juice
  • 1/4 teaspoon pepper
  • 2 medium stalks celery, sliced (1 cup)
  • 1 medium bell pepper, chopped (1 cup)
  • 1 medium onion, chopped (1/2 cup)
  • 1 can (14 oz) vegetable or chicken broth
  • 4 medium green onions, sliced (1/4 cup)
  • 1/4 cup pine nuts, toasted
Instructions:
  • Combine all ingredients in a 3- to 4-quart slow cooker, leaving out the green onions and nuts.
  • Cover and simmer on the Low heat setting for 6 to 8 hours.
  • Incorporate green onions and nuts.
