Barley Bean Stew

Delicious barley and bean stew: quick and flavorful dinner option!
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 large onion, chopped (1 cup)
  • 1 can (14 1/2 ounces) ready-to-serve vegetable broth
  • 1 can (14 1/2 ounces) diced tomatoes with basil, garlic and oregano, undrained
  • 1/3 cup uncooked barley
  • 1 cup frozen mixed vegetables
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 can (15 to 16 ounces) great northern beans, rinsed and drained
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a 3-quart saucepan, heat oil over medium-high heat. Cook the onion for 3 to 5 minutes until crisp-tender, stirring occasionally.
  • Combine the broth, tomatoes, and barley in the pot, bring to a boil, then lower the heat to medium. Cover and let it simmer for 20 minutes, stirring occasionally.
  • Add all remaining ingredients, excluding parsley. Bring to a boil, then reduce heat to medium. Cover and let simmer for 12 to 15 minutes, stirring occasionally, until the barley is tender.
  • Add fresh and vibrant parsley into the mixture and let it infuse for 2 minutes. Garnish each serving with an extra sprinkle of parsley for a burst of flavor and color, if desired.
