Barley Black Bean Burgers

Grilled vegetarian burger made with black beans, barley, Cheddar cheese, and veggies - a must-have for summer cookouts!
Ingredients:
  • 0.5 cup quick-cooking barley
  • 1 cup water
  • 1 (16 ounce) can black beans, drained and rinsed
  • 1 cup shredded Cheddar cheese
  • 1 cup mushrooms, minced
  • 0.5 onion, minced
  • 0.5 red bell pepper, minced
  • 0.25 cup fresh parsley, minced
  • 2 large eggs
  • 0.5 cup bread crumbs, or as needed
Instructions:
  • Preheat the grill to high heat and lightly oil the grate. Generously grease a sheet of aluminum foil with oil.
  • In a saucepan, bring barley and water to a boil. Cover, reduce heat, and simmer until barley is tender, about 10-15 minutes.
  • Mash black beans in a large bowl until thick and pasty using a fork. Stir in barley, Cheddar cheese, mushrooms, onion, red bell pepper, parsley, eggs, garlic, salt, black pepper, and enough bread crumbs to form a sticky batter that holds together.
  • Shape the batter into 4 to 6 patties and place them on the aluminum foil.
  • Grill patties on aluminum foil for 8 minutes per side.
