Cajun Barley Stew

French-inspired bean and barley stew ready in 35 minutes for a quick and delicious dinner!
Ingredients:
  • 2 teaspoons vegetable oil
  • 1 large onion, chopped (1 cup)
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1/2 cup uncooked quick-cooking barley
  • 5 cups tomato juice
  • 1 to 2 teaspoons Cajun or Creole seasoning
  • 2 cans (15 to 16 oz each) great northern or navy beans, drained, rinsed
  • 1/4 cup chopped fresh parsley
Instructions:
  • In a large skillet over medium-high heat, warm oil. Add onion and celery, stirring occasionally, cook until crisp-tender.
  • Add the rest of the ingredients except parsley and bring to a boil. Lower the heat, cover, and simmer for around 20 minutes until the barley is soft. Finally, mix in the parsley.
