Wholesome barley-oat pancakes with banana for a hearty and fiber-packed breakfast.
Ingredients:
  • 1 cup oat flour
  • 1 cup barley flour
  • 0.25 cup wheat germ
  • 1 tablespoon baking powder
  • 1.5 cups skim milk, or as needed
  • 2 eggs, slightly beaten
  • 0.5 banana, mashed
  • 2 tablespoons honey
  • 1 tablespoon oil
Instructions:
  • Combine oat flour, barley flour, wheat germ, brown sugar, baking powder, and salt in a bowl, creating a well in the center. In a separate bowl, mix milk, eggs, banana, honey, oil, and vanilla extract. Pour the milk mixture into the well formed in the flour mixture and gently mix until the batter is moistened and slightly lumpy. If needed, add more milk to adjust the batter consistency to your preference.
  • Preheat a griddle or skillet over medium-low heat until a drop of water sizzles on the surface. Lightly grease the griddle by wiping the bottom with a oil-dabbed paper towel.
  • Spoon batter onto the griddle to form 4- to 6-inch circles. Cook until bubbles form and edges are dry, about 3 to 4 minutes. Flip and cook until browned on the other side, about 2 to 3 minutes. Repeat with the rest of the batter.
