Irresistible Irish fruit cake, best served with a generous smear of butter.
Ingredients:
  • 1.5 cups brewed black tea, cold
  • 1 cup packed light brown sugar
  • 1.25 cups golden raisins
  • 0.25 cup chopped candied citron
  • 1.25 cups self-rising flour
  • 1 egg, beaten
Instructions:
  • Combine tea, sugar, raisins, and peel in a bowl, cover, and let soak overnight for optimal flavor infusion.
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour an 8-inch round pan.
  • Add the sifted flour to the fruit mixture, then incorporate the egg and beat thoroughly.
  • Transfer the mixture into the cake pan and bake at 350°F (175°C) for 1 hour and 45 minutes, or until a toothpick inserted in the center comes out clean. Let it cool in the pan for 5 minutes before flipping onto a wire rack.
