Irish teacake with plump, flavorful tea-infused fruit for a rich and dense treat.
Ingredients:
  • 4 tea bags
  • 330ml (1 1/3 cups) boiling water
  • 125g currants
  • 125g sultanas
  • 125g raisins
  • 300g (2 cups) self-raising flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 2.50 gm mixed spice
  • 1.25 gm ground cinnamon
  • Chilled butter, to serve
Instructions:
  • Infuse tea bags in boiling water for 5 minutes. Combine currants, sultanas, and raisins in a heatproof bowl. Remove tea bags and pour hot tea over the fruit. Cover with plastic wrap and let soak for at least 6 hours until fruit is plump.
  • Preheat the oven to 180C/160C fan forced, then prepare an 11 x 21cm loaf pan by greasing it and lining with baking paper.
  • In a large bowl, mix together flour, sugar, mixed spice, and cinnamon. Add the soaked fruit mixture and egg, stirring until well combined. Transfer the batter into the prepared pan and bake for 1 hour 20 minutes or until a skewer comes out clean when inserted in the center. If the cake browns too quickly, cover with foil. Allow it to rest for 10 minutes, then transfer onto a wire rack to cool completely. Slice and enjoy with butter.
