Irish Barmbrack: Moist fruitcake infused with tea, perfect for Halloween or any occasion.
Ingredients:
  • 2.5 cups chopped dried mixed fruit
  • 1.5 cups hot black tea
  • 2.5 cups flour
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking soda
  • 1 egg
  • 1.5 cups sugar
  • 0.25 cup lemon marmalade
  • 1 teaspoon grated orange zest
Instructions:
  • Allow the dried fruit to steep in hot tea for a minimum of 2 hours or overnight.
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9-inch Bundt pan. In a separate bowl, combine flour, cinnamon, nutmeg, and baking soda; set aside.
  • In a large bowl, delicately whisk egg before incorporating sugar, marmalade, orange zest, and tea-soaked fruit until fully blended. Carefully fold in the flour mixture until just incorporated, and then transfer into the prepared pan.
  • Bake in the preheated oven for about 1 hour, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 2 hours, then transfer to a wire rack to cool completely. Press desired decorations into the bottom of the cake before serving.
