Delicious Middle Eastern dessert with semolina, yogurt, and coconut, customizable sweetness with lemon syrup.
Ingredients:
  • 2 cups semolina flour
  • 0.33333334326744 teaspoon baking powder
  • 1 cup white sugar
  • 1 cup sweetened flaked coconut
  • 0.25 cup butter, melted
  • 1 cup plain yogurt
  • 0.25 cup milk, or as needed
  • 0.25 cup whole almonds
  • 1 cup water
  • 1 tablespoon lemon juice
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare an 8 inch square baking dish by greasing it.
  • Combine semolina flour, baking powder, 1 cup sugar, coconut, and butter in a large bowl. Stir in yogurt and milk until just moistened. Adjust consistency as needed with more milk. Transfer mixture to a greased 8-inch square baking dish, leveling the top. Garnish with whole almonds.
  • Bake until golden brown in a preheated oven for 40 to 45 minutes. In the meantime, simmer water, 1 cup of sugar, and lemon juice in a saucepan until thickened for at least 5 minutes.
  • Once the basboosa is baked, evenly pour the syrup over it. Return it to the oven for 5 minutes, or until fully absorbed. Allow it to rest for 20 minutes before cutting and serving.
