Delicious Middle Eastern semolina yogurt dessert soaked in fragrant rose water syrup, a cherished family recipe.
Ingredients:
  • 1.5 cups semolina flour
  • 1 cup plain yogurt
  • 0.5 cup vegetable oil
  • 3 tablespoons flaked coconut
  • 1 tablespoon baking powder
  • 6 whole almonds, split in half
  • 1.5 cups water
  • 1.75 cups white sugar
  • 2 tablespoons rose water
Instructions:
  • Combine semolina flour, 1/2 cup sugar, yogurt, oil, coconut, and baking powder in a medium bowl. Let it rest for 30 minutes.
  • Combine water, 1 3/4 cups sugar, and rosewater in a small saucepan over medium-high heat. Boil for 3-4 minutes, then let it cool to room temperature after removing from heat.
  • Preheat the oven to 350°F (175°C). Spread the semolina batter evenly in a 9x13 inch baking pan. Cut into squares or diamonds and top each piece with half of an almond.
  • Bake in a preheated oven for 20 minutes until light brown. Switch oven to broil, and broil for 2-3 minutes until the top is golden. Remove from oven, pour syrup over squares, and serve warm.
