Baseball Cookies with Royal Icing

Classic sugar cookies with royal icing, a home run treat for baseball game viewing.
Ingredients:
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, at room temperature
  • 1 cup white sugar
  • 1 tablespoon white vinegar, or as needed
  • 1 (16 ounce) package confectioners' sugar
  • 3 tablespoons meringue powder
  • 0.33333334326744 cup water
  • 2 tablespoons light corn syrup
  • 2 teaspoons clear vanilla extract
Instructions:
  • Combine the flour and baking powder in a bowl, stirring until well mixed.
  • In the bowl of a stand mixer with the paddle attachment, cream together butter and white sugar until light and fluffy, which takes about 3 minutes. Mix in the egg and vanilla extract for an additional minute. Gradually add the flour mixture and mix until the dough starts to pull away from the sides of the bowl.
  • Transfer the dough onto a sheet of parchment paper. Knead it a few times by hand and shape it into 2 discs. Wrap each disc in plastic wrap and chill in the refrigerator for 2 hours.
  • Start by warming up your oven to a toasty 350 degrees F (175 degrees C), then cover a baking sheet with a silicone mat.
  • Take out 1 disc of dough from the fridge. Place it on a floured surface, cover with parchment paper, roll it to 1/3-inch thickness, cut out shapes with cookie cutters, and place on a baking sheet.
  • Chill the baking sheet with cookies for 3 to 5 minutes in the freezer or refrigerator.
  • Bake the cookies in the preheated oven until they are just starting to turn golden brown, about 8 to 10 minutes. Allow them to cool on the baking sheet for 1 minute, then transfer to a wire rack to cool completely. Repeat with the second disc of dough.
  • Clean all icing-making equipment, such as spatulas, measuring cups, and bowls, by wiping them down with vinegar for a fresh and sanitary start.
  • Mix confectioners' sugar and meringue powder in a stand mixer bowl with the paddle attachment.
  • Combine water, corn syrup, and clear vanilla extract in a separate bowl. Pour this mixture into the sugar mixture and beat on medium speed for 4 to 5 minutes until stiff peaks form in the icing.
  • Drizzle the chilled cookies with icing for a delightful finishing touch.
