Bake adorable baseball cookies with Betty Crocker™ Sugar Cookie Mix for a winning treat that fans will love.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • Flour, butter and egg called for on cookie mix pouch for cutout cookies
  • 1 cup water
  • 1/2 cup meringue powder
  • 2 lb (7 to 8 cups) powdered sugar
  • 2 teaspoons light corn syrup
  • 1 teaspoon lemon extract
  • White food color, if desired
  • Water
  • Red gel food color
Instructions:
  • - Preheat the oven to 350°F. Combine the cookie mix, flour, butter, and egg in a medium bowl, stirring until a dough ball forms.
  • Roll out dough on a floured surface to a 1/4-inch thickness. Use a round cookie cutter to cut out rounds and place them 1 inch apart on ungreased cookie sheets.
  • Bake the cookies for 7 to 9 minutes, or until the edges turn a beautiful golden brown. Then, transfer them to cooling racks and let them cool completely for about 15 minutes.
  • Using an electric mixer with a paddle attachment, whip together water and meringue powder until foamy. Stir in powdered sugar, corn syrup, and lemon extract until well combined on low speed. Increase to medium-low speed and beat for 5 minutes. Increase the speed to medium-high and continue beating until stiff peaks form. Transfer the Royal Icing to an airtight container.
  • In a bowl, mix 1 cup of icing with white food color until it turns bright white. Put the mixture into a decorating bag with a small round tip. Pipe an outline on the outer edge of each cookie. Allow the icing to set for 1 hour.
  • Transfer a portion of the icing to a bowl and mix in white food coloring until it turns bright white. Add water gradually, about 1/2 to 1 teaspoon at a time, until fully combined. Keep stirring in water until the icing drops smoothly back into itself. Place the thinned icing into a decorating bag with a small round tip. Fill the center of each cookie with icing, then use a knife or toothpick to spread the icing to the edges. Allow the cookies to set for 6 hours or overnight.
  • Transfer 1 cup of icing to a bowl and mix in red food coloring. Fill a decorating bag with a small round tip with the colored icing. Use the bag to pipe baseball details onto the cookies. Allow the icing to set until completely dry.
