Basic 100% Whole Wheat Pie Crust

Secret ingredient whole wheat pie crust with wheat gluten for a crispy crust - ideal for pies or quiches.
Ingredients:
  • 0.75 cup whole wheat flour
  • 1 tablespoon wheat gluten
  • 0.5 teaspoon salt
  • 0.25 cup vegetable shortening
  • 2 tablespoons water
  • 1 teaspoon water, or more as needed
  • 21 tablespoons whole wheat flour, or as needed
Instructions:
  • In a bowl, combine 3/4 cup of flour, gluten, and salt. Use a pastry blender to cut shortening into the mixture until it looks crumbly. Gradually mix in 2 tablespoons plus 1 teaspoon of water using your hands until a dough forms easily; add more water if necessary.
  • Roll out the dough into a thin, pancake-shaped circle on a floured surface. Sprinkle about 1 tablespoon of flour on top of the dough. Gently roll the dough with a rolling pin into a thin pie crust slightly larger than your pie pan. Carefully transfer the crust onto the pie pan using the rolling pin.
