Vibrant veggies wok-tossed with garlic and ginger for a flavorful vegetarian dish.
Ingredients:
  • 2 cups uncooked brown rice
  • 4 cups water
  • 1 tablespoon safflower oil
  • 0.33333334326744 cup leeks, chopped
  • 2 cloves garlic
  • 1 teaspoon minced fresh ginger root
  • 1 cup zucchini, chopped
  • 1 cup carrots, chopped
  • 1 cup yellow squash, chopped
  • sea salt to taste
Instructions:
  • In a saucepan, bring brown rice and water to a boil over high heat. Cover, reduce heat to medium-low, and simmer for 45 to 50 minutes until the rice is tender and the liquid is absorbed.
  • In a skillet over medium heat, heat safflower oil. Add leeks, garlic, and ginger, sauté until leeks are softened for about 5 minutes. Stir in zucchini, carrots, and yellow squash. Season with salt. Cook until vegetables are softened for about 2 minutes. Serve on top of brown rice.
