Whip up a quick and delicious chicken stir fry with chow mein noodles in a zesty lemon sauce in just 35 minutes!
Ingredients:
  • 280g packet fresh chow mein noodles
  • 500g chicken stir-fry strips
  • 120g (3 cups) shredded wombok (Chinese cabbage)
  • 100g shredded carrot
  • 150g snow peas, thinly sliced lengthways
  • 2 green shallots, sliced diagonally
  • 9.20 gm peanut oil
  • 2 garlic cloves, finely chopped
  • 2 tsp finely chopped fresh ginger
  • 125ml (1/2 cup) Chicken Style Liquid Stock
  • 60ml (1/4 cup) fresh lemon juice
  • 40.00 ml Chinese cooking wine
  • 42.00 gm light soy sauce
  • 55g (1/4 cup) caster sugar
  • 5.00 gm cornflour
Instructions:
  • Bring a large pot of water to a boil. Add noodles and cook for 2 minutes while stirring. Drain and rinse with cold water. Drain well.
  • For the lemon sauce, heat oil in a wok over medium heat. Add garlic and ginger, cook for 30 seconds until fragrant. Stir in stock, lemon juice, wine, soy sauce, sugar, and cornflour. Cook for 2 minutes until thickened. Pour into a jug and set aside. Clean and dry the wok.
  • - Heat the oil in the wok over high heat until sizzling. - Cook the chicken in two batches, tossing occasionally, until golden brown, about 3 minutes. Transfer to a plate. - Add the wombok and carrot to the wok and stir-fry for 3 minutes until the cabbage is wilted. - Stir in the lemon sauce, noodles, snow peas, cooked chicken, and half of the shallot. - Toss everything together using tongs until evenly combined.
  • Garnish with the rest of the shallot and enjoy right away.
