Whip up a delicious marinara sauce in under an hour using an Instant Pot for quick and flavorful pasta or pizza creations.
Ingredients:
  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 0.25 cup dry red wine
  • 1 (28 ounce) can diced tomatoes
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried parsley
  • 0.75 teaspoon sea salt
  • freshly ground black pepper to taste
  • 1 pinch red pepper flakes
  • 1 bay leaf
Instructions:
  • Preheat Instant Pot to Saute function, heat olive oil, and cook onion until translucent for 3 to 5 minutes. Stir in garlic and cook until fragrant, about 1 minute. Add red wine and simmer until reduced by half.
  • Add diced tomatoes and whole tomatoes to the pot and bring to a gentle simmer. Stir in basil, oregano, parsley, salt, pepper, red pepper flakes, and bay leaf. Press the Keep Warm button, lock the lid and seal the vent. Set Manual function to 10 minutes and wait for pressure to build up for 10-15 minutes.
  • Carefully quick-release pressure following manufacturer's instructions for 5 minutes. Remove and unlock lid, discard bay leaf, then use immersion blender to puree sauce.
