Marinara Shrimp and Vegetable Bowls

30-minute shrimp and vegetable bowl with tangy marinara sauce and fresh basil.
Ingredients:
  • 1 package (7 ounces) vermicelli
  • 1 tablespoon olive or vegetable oil
  • 2 cloves garlic, finely chopped
  • 1/2 cup red onion wedges
  • 1 medium zucchini, cut into 2x1/4-inch strips
  • 1 medium yellow summer squash, cut into 2x1/4-inch strips
  • 1/4 teaspoon salt
  • 1 pound uncooked peeled deveined medium or large shrimp, thawed if frozen
  • 1 cup marinara sauce
  • 2 tablespoons chopped fresh or 1/2 teaspoon dried basil leaves
Instructions:
  • Prepare vermicelli according to package instructions. Meanwhile, heat oil in a 10-inch skillet over medium heat. Sauté garlic and onion for 2 to 3 minutes until onion is crisp-tender. Add zucchini, yellow squash, and salt, and cook for an additional 2 to 3 minutes until the squash is tender. Remove cooked vegetables from the skillet.
  • Add shrimp to skillet and sauté for 1-2 minutes until they turn pink and firm. In a separate 1-quart saucepan, heat marinara sauce over medium heat until hot.
  • Divide vermicelli evenly into 4 bowls, then mix each serving with a generous 2 tablespoons of marinara sauce. Add vegetables and shrimp on top. Drizzle the remaining marinara sauce over the bowls and finish with a sprinkle of fresh basil.
