Enhance your Christmas feast with bacon-infused turkey stuffing for a memorable smoky and salty flavor.
Ingredients:
  • 8 slices white bread
  • 40g butter
  • 2 bacon rashers, rind removed, finely chopped
  • 1 large brown onion, halved, finely chopped
  • 20.00 ml finely chopped fresh sage
  • 1 egg
  • Salt & freshly ground black pepper
  • 1 x 3.5kg fresh turkey or thawed frozen turkey
Instructions:
  • In a large shallow bowl or baking tray, let the bread rest overnight until stale. Remove the crusts with a serrated knife, tear into small pieces, and pulse in a food processor until coarsely chopped. Transfer the breadcrumbs to a large bowl.
  • In a medium frying pan over medium heat, melt the butter until it starts foaming. Sauté the bacon and onion for 5 minutes, or until the onion softens. Remove from heat and let it cool for 5 minutes. Combine the bacon mixture with the breadcrumbs.
  • Preheat your oven to 180°C. Combine sage and egg with the breadcrumb mixture, season with salt and pepper, then mix thoroughly with your hands.
  • Prepare turkey by removing excess fat, giblets, and neck from the cavity. Pat dry inside and out with paper towel. Stuff both cavities lightly with stuffing. Position turkey on a rack in a roasting pan. Tuck wing tips and neck flap under the turkey. Close the lower cavity opening by overlapping the edges and secure with toothpicks. Tie legs together with kitchen string. Cover with foil and roast in the oven for 2 hours. Uncover, baste with pan juices, and roast for an additional 30 minutes or until thigh juices run clear when pierced.
