Versatile shortcrust pastry is ideal for sweet fruit or dessert fillings.
Ingredients:
  • 250g plain flour
  • 125g butter, chilled, chopped
  • 70.95 gm caster sugar
  • 1 egg yolk
  • 20.00 gm chilled water
Instructions:
  • In a food processor, blend together flour, butter, and sugar until it resembles fine breadcrumbs. Then, add yolk and chilled water and pulse until dough forms.
  • Place the pastry on a lightly floured surface and knead until smooth. Form it into a disc, wrap it in baking paper, and chill in the refrigerator for 30 minutes.
  • Place the pan on a baking tray, then gently line the pastry case with baking paper. Fill it with ceramic pie weights or uncooked rice, then bake at 180C for 10 minutes. Once done, remove the weights and paper, and bake for an additional 5 to 10 minutes, or until the pastry turns golden. Let it cool before using.
