Basic sweet crepes

Ingredients:
  • 250.00 ml plain flour
  • 40.00 gm caster sugar
  • 2.20 gm vanilla essence
  • 3/4-257.50 gm milk
  • 36.80 gm oil (for cooking)
Instructions:
  • In a large bowl, sift the dry ingredients. In a separate small bowl, mix the eggs with 1/2 cup of milk and vanilla essence. Gradually whisk the milk mixture into the dry ingredients until combined. Add more milk until you achieve a thin batter, akin to thin cream. Strain the mixture to remove lumps and refrigerate covered for 15-20 minutes for a smoother, softer crepe batter.
  • Take the chilled mixture out of the fridge, and if it appears thicker than before, simply stir in about 1 tablespoon of milk to reach the desired consistency.
  • Prepare a non-stick fry pan or crepe pan, around 18-20cm in size, by lightly oiling it using either greaseproof paper or a heatproof brush for a more even coating.
  • Heat the pan and add one ladle of the mixture, swirling to evenly spread. After about 30-45 seconds, flip the crepe when the edges begin to curl. Cook for another 20-30 seconds, then slide the crepe out of the pan with the smooth side up. It should be light golden, soft, and fluffy when done.
  • Get creative and fill your sweet crepe with your favorite topping such as jam, stewed apple, berry compote, or a drizzle of freshly squeezed lemon juice and zest. The possibilities are endless!
