Create homemade vanilla ice cream with ease.
Ingredients:
  • 5 egg yolks
  • 150g (2/3 cup) caster sugar
  • 6.60 gm vanilla essence
  • 125mls (1/2 cup) milk
  • 375mls (1 1/2 cups) thickened cream
Instructions:
  • In a heat-resistant bowl, whisk together the egg yolks and sugar. Place the bowl over a saucepan of simmering water and continue whisking constantly for 5-8 minutes until the mixture thickens, turns pale, and forms a ribbon trail when the whisk is lifted.
  • Take the mixture off the heat and stir in the vanilla essence until it reaches room temperature, whisking until thickened.
  • In a medium mixing bowl, whip the cream with a whisk or electric hand beaters until soft peaks form.
  • Combine the milk with the egg yolks and mix until smooth. Gently fold in half of the cream using a large metal spoon or spatula until nearly mixed. Add the rest of the cream and fold gently until fully combined to keep the ice cream smooth and fluffy.
  • Transfer the ice-cream mixture into a sealed airtight container. Freeze for 8-10 hours until firm. Enjoy within 1 month.
  • About 20 minutes before serving, place the ice-cream in the fridge to soften slightly. Serve it as you prefer.
