Basic vanilla ice-cream

Indulge in cold vanilla ice-cream to beat the summer heat.
Ingredients:
  • 300ml thick cream
  • 300ml milk
  • 1 vanilla bean, split
  • 6 egg yolks
  • 175g caster sugar
  • 4.40 gm vanilla extract
Instructions:
  • In a saucepan, combine cream, milk, vanilla seeds, and vanilla bean. Bring to a boil, then remove from heat and let it sit for 10 minutes to infuse. In an electric mixer bowl, whisk together egg yolks, sugar, and vanilla extract until pale. Slowly pour in the infused milk mixture, then transfer back to the saucepan.
  • Stir constantly over gentle heat for approximately five minutes until the mixture slightly thickens and smoothly coats the back of a wooden spoon.
  • Allow the mixture to cool before chilling in the refrigerator for 30 minutes.
  • Freeze custard until edges are frozen. Take it out of the freezer and whip with an electric beater. Freeze again. Repeat twice more. Or churn in an ice-cream machine following the manufacturer's instructions.
