Basil and lemon chicken salad on toasted ciabatta

Peppery rocket and zesty lemon brighten succulent chicken bruschetta.
Ingredients:
  • 8 slices ciabatta (crusty Italian bread)
  • Olive oil spray
  • 1 garlic clove, halved
  • 750.00 ml shredded Roast Chicken
  • 2 tsp finely grated lemon rind
  • 42.00 gm fresh lemon juice
  • 27.30 gm olive oil
  • 100g baby rocket leaves
  • 40.00 ml shredded fresh basil
  • 1/2 small red onion, thinly sliced
  • 1 celery stick, trimmed, thinly sliced
Instructions:
  • Heat up your barbecue grill or chargrill on high heat. Lightly spray both sides of the bread with oil. Grill each side for 1-2 minutes until nicely charred. Gently rub the cut side of the garlic against one side of each bread slice.
  • Combine the chicken, lemon zest, lemon juice, olive oil, arugula, basil, onion, and celery in a large bowl.
  • Serve a portion of the bread on each plate and generously top with the salad.
