Basil chicken and avocado wonton cups

Impress your guests with delicious chicken and avocado wonton cups.
Ingredients:
  • 1 (about 250g) single chicken breast fillet
  • Olive oil, to grease
  • 24 fresh flour wonton wrappers
  • 45g (1/4 cup) pine nuts
  • 12 fresh green basil leaves, washed, dried, shredded
  • 2 fresh long red chillies, finely chopped
  • 2 green shallots, ends trimmed, finely chopped
  • 37.60 gm sour cream
  • 1/2 ripe avocado, peeled, finely chopped
  • 21.00 gm fresh lemon juice
Instructions:
  • Preheat oven to 190°C. Poach the chicken in cold water in a small frying pan over medium-high heat until cooked through, about 10 minutes. Let it cool briefly, then shred and transfer to a large bowl.
  • Brush twenty-four 30ml (1 1/2-tablespoons) capacity mini muffin pans with oil to lightly grease. Press a wonton wrapper into each pan, lining the base and sides so that it extends above the pan. Bake in a preheated oven for 5 minutes until golden brown and crisp. Set aside in the pans until needed.
  • Toast pine nuts in a preheated small frying pan over medium-high heat for 2 minutes or until golden brown, stirring occasionally. Let them cool for 5 minutes before adding to the chicken in the bowl.
  • Combine the basil, chili, green shallot, garlic, and sour cream with the chicken mixture, stirring until thoroughly mixed. Season with salt and pepper to taste.
  • Mix the avocado with fresh lemon juice in a small bowl.
  • Evenly distribute the flavorful chicken mixture into the crispy wonton cups. Present them beautifully on a platter, and generously top them with the creamy avocado mixture before serving promptly.
