Delicious summer sandwich, ideal for lunch.
Ingredients:
  • 375ml (1 1/2 cups) chicken style liquid stock
  • 220g (1 single) chicken breast fillet
  • 150g (about 1/2 large) ripe avocado, peeled
  • 10.60 gm fresh lemon juice
  • 1/2 red onion, thinly sliced
  • 40.00 ml shredded fresh basil
  • Salt & freshly ground black pepper
  • 8 x 1.5cm-thick slices ciabatta bread
  • 1 ripe egg tomato, thinly sliced lengthways
  • 100g watercress
Instructions:
  • In a small saucepan, gently simmer the stock, then add the chicken and simmer on low heat, covered, for 12-15 minutes until cooked through. Drain and transfer chicken to a plate. Chill in the fridge for 15 minutes before serving.
  • Mash together avocado and lemon juice using a fork in a medium bowl. Roughly chop the chicken, then combine with avocado mixture, onion, and basil. Season with salt and pepper to taste.
  • Evenly layer the flavorful chicken mixture on half of the bread slices. Add fresh tomato slices and crisp watercress, then sandwich with the remaining bread slices for a delicious bite.
