Creamy crab spread on crisp cucumber slices for a delicious and colorful snack.
Ingredients:
  • 1 medium English cucumber
  • 1 package (3 oz) cream cheese, softened
  • 2 tablespoons mayonnaise or salad dressing
  • 1/4 cup chopped fresh basil leaves
  • 2 tablespoons finely chopped red onion
  • 2 teaspoons grated lemon peel
  • 1 cup frozen cooked crabmeat, thawed, flaked
  • 2 tablespoons capers, if desired
  • Small basil leaves or chopped fresh basil, if desired
Instructions:
  • To add decorative ridges, use a fork to score the cucumber lengthwise. Proceed to slice it into 36 (1/4-inch) rounds.
  • In a small bowl, whisk together cream cheese and mayonnaise until smooth. Gently fold in basil, onion, lemon peel, and crabmeat.
  • Top each cucumber slice with a generous teaspoon of crabmeat mixture. Scatter capers over the top and finish with a beautiful garnish of fresh basil leaves.
