Spicy cayenne pepper gives a fiery kick to this romantic skillet dish for two.
Ingredients:
  • 2 cups cubed cooked potatoes (2 medium)
  • 1 small onion, chopped (1/4 cup)
  • 1/4 cup chopped red bell pepper
  • 4 eggs
  • 1 tablespoon chopped fresh basil leaves or 1 teaspoon dried basil leaves
  • 1/8 teaspoon ground red pepper (cayenne)
Instructions:
  • Prepare a 10-inch nonstick skillet with cooking spray and heat over medium heat. Sauté potatoes, onion, and bell pepper in the skillet for approximately 5 minutes, stirring occasionally, until heated through.
  • Blend remaining ingredients until smooth, then pour into a skillet. Allow mixture to set at the bottom and sides. Gently lift the cooked portions with a spatula to let the uncooked portion flow to the bottom. Avoid over-stirring. Cook for 2 to 4 minutes until eggs are thickened yet still moist.
