Pepper pork, vegetable and basil stir-fry

Pepper and basil elevate this low-calorie stir-fry with bold flavors.
Ingredients:
  • 40.00 ml dry sherry
  • 21.00 gm salt-reduced soy sauce
  • 14.40 gm honey
  • 500g pork fillet, thinly sliced
  • 1 large red onion, cut into thin wedges
  • 2 garlic cloves, crushed
  • 1 tsp freshly ground black pepper
  • 2 large celery sticks, thinly sliced
  • 300g broccoli, trimmed, cut into small florets
  • 1 red capsicum, cut into strips
  • 40.00 gm water
  • 125.00 ml fresh basil leaves
  • 400.00 gm steamed Brown Rice, to serve
  • Extra fresh basil leaves, to serve
Instructions:
  • In a small bowl, mix together the sherry, soy sauce, and honey until well combined. Heat a large non-stick wok over high heat and spray with oil. Stir-fry the pork in 2-3 batches for 1-2 minutes each until golden. Transfer to a plate.
  • 1. Preheat a wok over high heat and give it a quick spray of oil. Cook the onion, stirring, for 2 minutes until golden. 2. Add garlic and pepper, stir-fry for 30 seconds until fragrant. 3. Toss in celery, broccoli, capsicum, and water. Stir-fry for 2 minutes until veggies are tender-crisp.
  • Combine the pork, sauce, and any resting juices in a sizzling stir-fry. Cook for 1-2 minutes until everything melds and warms up. Mix in the fragrant basil leaves. Plate over fluffy steamed brown rice and garnish with more basil leaves. Serve and enjoy!
