Try this quick and delicious tomato-basil vegetable soup for a cozy meal in no time.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 2 medium carrots, finely chopped (1/2 cup)
  • 1 small onion, finely chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 6 large tomatoes, peeled, seeded and chopped (6 cups)*
  • 1 can (8 oz) tomato sauce
  • 1/4 cup thinly sliced fresh basil leaves or 2 teaspoons dried basil leaves
  • 1/2 teaspoon sugar
  • Dash of pepper
Instructions:
  • In a 3-quart saucepan, heat oil over medium heat. Saute carrots, onion, and garlic for about 10 minutes, stirring occasionally, until tender but not browned.
  • Add the tomatoes and cook uncovered for about 10 minutes, stirring occasionally, until they are heated through.
  • Incorporate the rest of the ingredients and cook uncovered for about 10 minutes, stirring occasionally until heated through.
