Indulge in a satisfying and rich tomato basil soup, perfect as a standalone meal.
Ingredients:
  • 6 tablespoons butter
  • 1 onion, thinly sliced
  • 15 baby carrots, thinly sliced
  • 2 stalks celery, thinly sliced
  • 3 cloves garlic, chopped
  • 1 (28 ounce) can tomato sauce (such as Hunt's®)
  • 1 (8 ounce) can tomato sauce (such as Hunt's®)
  • 1.25 cups chicken broth
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • salt and ground black pepper to taste
  • 1.5 cups heavy whipping cream
Instructions:
  • In a large pot, melt butter over medium-low heat. Sauté onion, carrots, celery, and garlic until tender, about 10 minutes. Add tomato sauce, chicken broth, basil, and oregano. Increase heat to medium and simmer until the soup thickens, 10 to 20 minutes.
  • Carefully blend soup in batches in a blender until smooth, adding cream as you go. Transfer the creamy soup to a separate pot.
  • Stir soup on medium-high heat until steaming, for an additional 5 minutes.
