Basque pastry with rich cream filling in flaky dough.
Ingredients:
  • 1.125 cups milk
  • 0.33300000429153 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1.125 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1.125 cups white sugar
Instructions:
  • To prepare the pastry cream filling: In a saucepan, heat milk and 1/3 cup sugar until boiling, stirring to dissolve sugar. Remove from heat. In a small bowl, mix 1/3 cup sugar and 2 tablespoons flour. Beat in eggs and vanilla.
  • Combine 1/2 cup of hot milk with the egg mixture, then pour it back into the saucepan. Return to heat, bring to a boil, and cook over medium heat until thick and smooth. Remove from heat and cool for 1 hour.
  • Preheat your oven to 350 degrees F (175 degrees C), and prepare a 9-inch springform pan by greasing and flouring it. Next, sift together the flour and baking powder, and set aside.
  • Whisk 1 1/8 cup sugar and 3 eggs until light and fluffy. Gently fold in the sifted flour mixture in three parts, being cautious not to overmix.
  • Spread half of the dough evenly in the greased pan and cover the bottom. Next, leave a 3/4-inch border and spread the pastry cream evenly. Add the remaining dough on top, sealing in the filling completely.
  • Bake at 350 degrees F (175 degrees C) until beautifully golden brown, for 30 to 40 minutes.
