Hubby's go-to fish dish, perfect with any fresh catch, especially halibut. Pair with creamy mashed potatoes.
Ingredients:
  • 2 cups olive oil for frying
  • 1 red onion, sliced and separated into rings
  • 0.5 cup balsamic vinegar
  • 2 cups plain dry bread crumbs
  • 1 cup self-rising flour
  • 6 (6 ounce) fillets halibut
Instructions:
  • Heat a generous layer of oil in a large heavy skillet over medium heat. As the oil heats up, lay the red onion on a platter and drizzle with balsamic vinegar.
  • Mix together the bread crumbs and flour. Coat the fish on both sides with the mixture. Fry in hot oil until cooked through, approximately 5 minutes per side.
  • Transfer the onions to a dish to drain. After 5 minutes, plate them and drizzle with vinegar and onions for a visually appealing presentation.
