Elevate backyard oysters to upscale appetizers with a finger-licking twist.
Ingredients:
  • 1 whole grain baguette
  • 2 tablespoons olive oil
  • 0.75 pound Brie cheese
  • 24 oysters - shucked, rinsed and drained
  • 0.25 cup butter, melted
  • salt and pepper to taste
  • 1 red bell pepper, cut into thin strips
Instructions:
  • Preheat the oven to 350°F (175°C). Slice the baguette into 24 rounds, lightly brush with olive oil, and place on a baking sheet.
  • Place the bread rounds in the preheated oven until they are crisp, for about 5 to 8 minutes. While the bread is toasting, cut the Brie cheese into 24 equal slices. Take the toasted bread out of the oven and place a slice of Brie cheese on each round. Put the crostini back into the oven to melt the cheese for approximately 5 minutes.
  • Preheat the broiler in the oven and position the rack 6 inches away from the heat source. Combine oysters, butter, any leftover olive oil, salt, and pepper in an ovenproof casserole dish.
  • Broil the oysters until they start to curl at the edges, about 5 minutes. Place one oyster on each crostini, top with red pepper strips, and serve warm.
