BBQ baked beans

Satisfying meat-free dinner or perfect side dish without croutons for roasted meats.
Ingredients:
  • 2 red onions
  • 2 cloves of garlic
  • 1 fresh red chilli
  • 2 large carrots
  • 1 heaped teaspoon sweet smoked paprika
  • 1 level teaspoon cumin seeds
  • 1 level teaspoon dried chilli flakes
  • 6 medium sweet potatoes
  • 1 x 700 ml jar of passata
  • 2 x 400 g tins of mixed beans
  • 100 ml quality BBQ sauce
  • a few sprigs of fresh rosemary
  • ½ a loaf of ciabatta or stale bread
  • 40 g Cheddar cheese optional
  • fat-free natural yoghurt to serve
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Peel and finely slice the onions and garlic along with the chilli. Peel and chop the carrots. Place them in a large roasting tray with a drizzle of oil, paprika, cumin, and chilli flakes. Cook on medium heat for 20 minutes until softened. Scrub the sweet potatoes clean, rub with oil, salt, and pepper, then set aside on a baking tray. After 20 minutes, stir in the passata, add beans with their juice. Drizzle with BBQ sauce, season, and sprinkle with chopped rosemary. Bake for 1 hour. Bake sweet potatoes for the same time until soft. Tear bread into chunks, toss with oil, and grated Cheddar. Bake until crispy for 15 minutes. Serve beans and sweet potatoes with dollops of yogurt and homemade croutons. Enjoy with a side of green salad.
