Indulgent BBQ baked beans with bacon, pork, and spices - a must-have for summer gatherings.
Ingredients:
  • 1 pound dried red beans
  • 3 quarts water
  • 1.5 pounds boneless pork shoulder, cut into 2-inch cubes
  • 1 yellow onion, chopped
  • 1 cup barbecue sauce
  • 0.5 cup ketchup
  • 0.33 cup apple cider vinegar
  • 0.25 cup packed light brown sugar
  • 3 tablespoons molasses
  • 2 tablespoons yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1 tablespoon smoked paprika
  • 0.125 teaspoon cayenne pepper
  • 1 teaspoon freshly ground black pepper
  • 1 tablespoon kosher salt
  • 2.50 cups reserved bean cooking liquid
  • 6 slices thick-cut bacon
Instructions:
  • Assemble all your ingredients.
  • Place dry beans in a bowl, completely submerge them in water, and allow them to soak for 8 hours or overnight.
  • Rinse beans and place in a large pot with 3 quarts of cold water. Add bay leaf, pork shoulder, and onion. Bring to a high simmer. Reduce heat, skim off any foam, and simmer gently for about 1 hour until beans are tender.
  • Lower the heat to medium-low and gently stir the mixture. If preferred, remove any foam that appears on the surface. Allow the beans to simmer until they are perfectly tender, approximately 1 hour.
  • Mix together barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire sauce, smoked paprika, cayenne pepper, black pepper, kosher salt, and garlic powder in a bowl using a whisk. Keep it aside for later use.
  • Preheat the oven to 350°F (175°C), then transfer the tender bean mixture to a 15x10-inch deep baking dish using a spider strainer.
  • Pour in the flavorful barbecue sauce mixture along with 2 ½ cups of the bean cooking liquid, then delicately place the savory bacon slices on top.
  • Roast in the middle of a hot oven until the liquids thicken into a rich sauce, about 2 to 3 hours.
