BBQ Chicken and Cheese Grits Bake

Try a delicious cheesy barbecue chicken with corn grits for a family-friendly dinner tonight.
Ingredients:
  • 4 cups water
  • 1/2 teaspoon salt
  • 1 cup uncooked quick-cooking corn grits
  • 2 cups shredded pepper Jack cheese (8 oz)
  • 3 tablespoons butter
  • 5 cups shredded deli rotisserie chicken (from 3-lb chicken)
  • 1 cup barbecue sauce
  • 1 cup shredded Colby-Monterey Jack cheese blend (4 oz)
  • 1 cup pico de gallo salsa
  • 1/2 cup chopped green onions (8 medium)
Instructions:
  • Preheat oven to 350°F and generously coat a 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a 3-quart saucepan, bring water and salt to a boil. Gradually whisk in grits; lower heat to medium. Cover and simmer for 5 minutes, stirring occasionally. Take off the heat. Mix in pepper Jack cheese and butter until melted and creamy. Transfer to a baking dish.
  • Combine tender pieces of chicken with savory barbecue sauce in a bowl. Serve the flavorful chicken mixture over creamy grits and top with a generous sprinkle of cheese blend.
  • Bake for 20-25 minutes until bubbling. Allow to cool for 5 minutes, then garnish with onions and salsa before serving.
