Ultimate barbecue chicken recipe for summer gatherings and cookouts.
Ingredients:
  • 4 pounds bone-in, skin-on chicken parts (legs, thighs, wings, breasts)
  • Salt
  • Extra virgin olive oil or vegetable oil
  • 1 cup barbecue sauce, store-bought or homemade
Instructions:
  • Prepare the chicken: Drizzle olive oil over the chicken pieces and generously season with salt, ensuring even coverage all around.
  • Preheat one side of the grill for high, direct heat. Ensure there is a cooler side with few to no coals if using charcoal or wood.
  • Place the chicken pieces skin side down on the hottest side of the grill to achieve a perfect sear. After 5-10 minutes, once the skin is nicely seared, flip the chicken and move to the cooler side of the grill. For gas grills, keep the flames on one side only, adjusting the temperature to low or medium low (250°F - 275°F). Cover and cook for 20-30 minutes undisturbed.
  • Flip the chicken pieces and generously coat them with your favorite barbecue sauce. Cover and cook for an additional 15 to 20 minutes. Repeat the process every 10 to 30 minutes, flipping the pieces, basting them with sauce, and covering until desired doneness is achieved: 160°F for breasts and 170°F for thighs with a meat thermometer, or until juices run clear when pierced with a knife. Adjust cooking time based on grill setup and chicken size. Maintain a low grill temperature for optimal results.
  • For a perfect finish, give the pieces a final sear on the hot side of the grill. Place them skin side down and let them sear until slightly blackened, about 1-2 minutes. Remove from heat.
