Succulent oven-baked BBQ chicken thighs - perfect for chilly days when grilling isn't an option.
Ingredients:
  • 1.5 cups brown sugar
  • 0.5 cup barbeque sauce
  • 0.5 cup ketchup
  • 0.5 cup honey
  • 0.25 cup soy sauce
  • 8 (5 ounce) boneless, skinless chicken thighs
Instructions:
  • In a large glass or ceramic bowl, combine brown sugar, barbecue sauce, ketchup, honey, and soy sauce. Reserve 1/2 cup of the mixture for basting, then chill. Add chicken thighs to the remaining marinade, ensuring they are evenly coated. Cover with plastic wrap and refrigerate for 2 to 6 hours.
  • Preheat the oven to 425°F (220°C) when ready to cook.
  • After removing the chicken from the marinade, gently shake off any excess. Dispose of the leftover marinade and then transfer the chicken to a glass baking dish.
  • Roast the chicken in the flavorful marinade, basting it with the reserved 1/2 cup, until it's fully cooked and the juices run clear, about 30-40 minutes at 165 degrees F (74 degrees C).
