Speedy stovetop pulled chicken bathed in tangy homemade BBQ sauce for maximum flavor and tenderness.
Ingredients:
  • 2 pounds boneless, skinless chicken thighs, cut in half widthwise
  • 1/2 cup ketchup
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Instructions:
  • Prepare the barbecue sauce: Whisk together ketchup, vinegar, brown sugar, smoked paprika, cumin, salt, and pepper in a large Dutch oven or heavy-bottomed pot with a lid until fully combined.
  • Toss chicken in barbecue sauce until coated. Simmer uncovered over medium heat until sauce is bubbling. Stir chicken, reduce heat to medium-low, and partially cover with a lid to let steam escape. Cook for 20 minutes.
  • Shred the chicken by carefully pulling it apart with two forks directly in the pot. If needed, transfer to a cutting board or bowl to shred using a hand mixer with beaters.
  • Finish and serve: Once the chicken is shredded, turn the heat to high and cook until the barbecue sauce thickens and reduces, about 5-10 minutes. It should coat the chicken without dripping. Season with salt and pepper, then serve to your liking. For storing leftovers, cool to room temperature, place in an airtight container, and refrigerate for up to 5 days. Avoid using aluminum foil for acidic sauces like this barbecue sauce. To reheat, warm in a pot with a little water over medium-low heat until bubbling. Enjoy!
