BBQ kebabs with mashed sweet potato and minted peas

Grill chicken skewers with mashed sweet potato and peas for a delicious meal.
Ingredients:
  • Olive oil spray
  • 8 BBQ chicken kebabs
  • 1 kg sweet potatoes, peeled, chopped
  • 40.40 gm thickened cream
  • Salt & freshly ground pepper
  • 600g pkt frozen baby peas
  • 82.50 ml fresh mint leaves, roughly chopped
  • 20g butter
Instructions:
  • Gently spray a non-stick frying pan with oil. Cook the kebabs in two batches, flipping frequently for 6 minutes or until fully cooked. Place on a plate and cover with foil to stay warm.
  • Boil sweet potato until tender, then mash it with cream. Season with salt and pepper to taste.
  • While the peas are cooking in boiling water for 2 minutes, or until just tender, mash them roughly. Mix in the mint, butter, and season with salt and pepper. Serve the kebabs with the mashed peas.
