Savory pulled pork stuffed cornbread muffins for a delicious snack or side dish.
Ingredients:
  • cooking spray
  • 1 (8.5 ounce) package dry corn muffin mix (such as Jiffy®)
  • 1 egg
  • 0.33333334326744 cup milk
  • 0.25 cup shredded pepperjack cheese
  • 1 cup pulled pork in barbeque sauce
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Prepare a muffin tin by lining each cup with paper baking cups and then spray them with cooking spray.
  • Combine muffin mix, egg, milk, and 1/4 cup shredded cheese in a bowl and stir until well mixed.
  • Divide the batter evenly among the muffin cups, filling them only halfway.
  • Generously top each cup with 1 to 2 tablespoons of flavorful pulled pork.
  • Spread the remaining batter on top.
  • Sprinkle each muffin with the remaining 1/4 of shredded cheese for a gooey, delicious finish.
  • Bake in the oven until a toothpick inserted comes out clean, about 20 minutes.
