Impress with ease: a simple yet sophisticated rack of lamb recipe perfect for entertaining.
Ingredients:
  • 1 cup Heinz Tomato Ketchup
  • 2 tablespoons Heinz Worcestershire Sauce
  • 2 tablespoons Heinz® Apple Cider Vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh oregano
  • 2 teaspoons finely grated lemon zest
  • 1 teaspoon pepper
  • 0.5 teaspoon salt
  • 2 large red onions, sliced thickly
  • 2 racks lamb
Instructions:
  • Combine ketchup, Worcestershire sauce, vinegar, garlic, parsley, oregano, lemon zest, pepper, and salt in a bowl, then divide the mixture in half.
  • Skewer onion slices to create lollipop shapes. Brush lamb and onions with half of the marinade. Let them marinate for 15 minutes. Preheat the grill to medium heat, then grill the onions and lamb, starting with the meaty side down.
  • Grill the meat, basting and turning occasionally, until medium-rare, approximately 25 minutes. Grill the onions for the same duration, turning as necessary. Allow the meat to rest for 10 minutes before cutting into 2 rib portions. Serve with onion rings.
