Bbq snapper with roasted tomato and caper relish recipe

Tasty snapper with zesty capers, olives, and tomatoes - a quick and delightful dish!
Ingredients:
  • 350g mixed medley tomatoes, halved or thickly sliced
  • 60ml olive oil
  • 20.00 ml drained baby capers
  • 60g olive
  • 30.00 ml red wine vinegar
  • 2 zucchini, peeled into ribbons
  • 4 Snapper Fillets
  • 120g pkt Baby Rocket
  • 125.00 ml mint leaves
  • 62.50 ml basil leaves
Instructions:
  • Preheat the oven to 200°C. Line a baking tray with parchment paper. Arrange the tomato on the tray, drizzle with 1 tablespoon of oil, season, and bake for 15-20 minutes until the tomato starts to collapse. Transfer the tomato to a heatproof bowl and mix in capers, olives, vinegar, and 1½ tablespoons of the remaining oil. Let it cool slightly before serving.
  • Preheat a chargrill on high heat. Brush zucchini and snapper with the remaining oil, then season them. Grill the zucchini for 2 minutes on each side until lightly charred. Transfer to a bowl.
  • Grill the snapper for 3 minutes on each side, or until perfectly cooked. Plate and serve.
  • Place the zucchini, rocket, mint, and snapper on plates. Mix the basil with the tomatoes. Pour the tomato mixture over the snapper before serving.
