BBQ tofu and zucchini salad

Try this quick and healthy tofu and zucchini salad, packed with protein and fiber. Ready in just 20 minutes!
Ingredients:
  • 250g pkt pearl couscous
  • 2 zucchini, thinly sliced lengthways
  • 300g firm tofu, thinly sliced
  • 60ml olive oil
  • 60ml balsamic vinegar
  • 1 garlic clove, crushed
  • 60g pkt Baby Rocket
  • 200g Perino tomatoes, sliced
  • 2 spring onions, thinly sliced
  • 125.00 ml flat-leaf parsley leaves
Instructions:
  • Boil couscous in a saucepan for 10 minutes until tender. Rinse with cold water, drain well, and transfer to a bowl.
  • Preheat a chargrill on high heat. Lightly coat zucchini and tofu with olive oil spray. Grill in 2 batches for 1-2 minutes per side until nicely charred.
  • Shake together oil, vinegar, and garlic in a screw-top jar until thoroughly mixed. Season to taste.
  • Distribute couscous and arugula on plates. Layer with tomato, zucchini, and tofu. Garnish with scallions and parsley. Drizzle with dressing before serving.
