Ingredients:
  • 1.5 cups cooked yellow rice
  • 1 serving cooking spray
  • 8 (8 inch) flour tortillas
  • 0.25 cup prepared yellow mustard
  • 0.25 cup sour cream
  • 0.33333334326744 cup honey
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced green bell pepper
  • 1 (15 ounce) can garbanzo beans, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn kernels
  • 2 cups shredded cooked chicken
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup shredded Cheddar cheese
  • 1.5 teaspoons ground cumin
Instructions:
  • Cook the yellow rice according to package instructions, then set aside 1 1/2 cups for later use. Store any extra rice in the refrigerator for future meals.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) while giving your 9x13 inch baking dish a quick spritz with cooking spray.
  • Place 4 tortillas on the bottom of the baking dish. Prepare the honey sauce by whisking together mustard, sour cream, and 1/3 cup honey in a small bowl. In a large bowl, mix red pepper, green pepper, garbanzo beans, black beans, and corn. Set aside 1/2 cup of the bean mixture for topping.
  • Combine the chicken, 1/4 cup mozzarella cheese, 1/4 cup Cheddar cheese, cumin, yellow rice, and honey sauce with the bean mixture and mix thoroughly. Transfer the mixture into the baking dish. Top with 4 tortillas; then sprinkle with the remaining 1/4 cup mozzarella cheese, 1/4 cup Cheddar cheese, and the reserved 1/2 cup bean mixture.
  • Bake in a preheated oven for 30 to 45 minutes until hot and bubbly. If the top browns too quickly, cover with aluminum foil. Once done, drizzle with the remaining 2 tablespoons of honey.
